Place fat side down in a flan dish on the turntable.  Calculate the
cooking time.
Use sequence programming:
Stage 1: Cook on MEDIUM for first half of cooking time.  Turn
over, remove juices.
Stage 2: Cook on DUAL GRILL, MEDIUM for the final 6-8
minutes of cooking time.
Stand for 6-8 minutes after cooking
